Ingredients
  

  • 1 can of pumpkin puree
  • 4 eggs
  • 1 cup of vegetable oil or any other flavorless oil
  • 2/3 cup water
  • 1 1/2 cups white sugar
  • 1 1/2 cups brown sugar
  • 3 1/2 cups all-purpose flour
  • 2 tsp baking soda
  • 1 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1/2 tsp ground cloves
  • 1/4 tsp ground ginger
  • 1/4 tsp ground allspice
  • 1/4 tsp ground cardamom

Instructions
 

  • Start by preheating your oven to 350 degrees Fahrenheit. Also, Prep your muffin or loaf pans by greasing them with cooking spray or butter.
  • In a large mixing bowl combine your pumpkin puree, vegetable oil, eggs, water, white sugar, brown sugar, and spices. Mix until combined.
  • In that same mixing bowl, with a sifter, add the salt, baking soda, and flour. Mix until combined. It will still be a little lumpy. That is okay!
  • Now, add your batter to your pans and top with crushed pumpkin seeds if desired. Bake in the oven on the middle rack for 50 minutes. Check if a toothpick inserted in the middle comes out clean.
  • When out of the oven wait 10-20 minutes before removing from the pans. Once removed, place on a wire cooling rack to cool completely before serving. Can be served with butter on top or plain.
