Start by preheating your oven to 350 degrees Fahrenheit. Also, Prep your muffin or loaf pans by greasing them with cooking spray or butter.
In a large mixing bowl combine your pumpkin puree, vegetable oil, eggs, water, white sugar, brown sugar, and spices. Mix until combined.
In that same mixing bowl, with a sifter, add the salt, baking soda, and flour. Mix until combined. It will still be a little lumpy. That is okay!
Now, add your batter to your pans and top with crushed pumpkin seeds if desired. Bake in the oven on the middle rack for 50 minutes. Check if a toothpick inserted in the middle comes out clean.
When out of the oven wait 10-20 minutes before removing from the pans. Once removed, place on a wire cooling rack to cool completely before serving. Can be served with butter on top or plain.
