Deadpool’s Vegan Breakfast Chimichangas

      When I started trying to come up with recipes for this blog I wanted to incorporate some vegan recipes. A bunch of my family members are vegan and I wanted to write a recipe for them. I also like to believe that everyone could eat a little less meat in their lives. Studies have shown time and time again all the benefits of cutting a good portion of your meat out of your diet. I also, like many people have trouble digesting dairy and love to see vegan recipes when searching for one, that way I know for sure there is not going to be any dairy in it at all. With this blog, I want to try every recipe that I make so that I can provide my seal of approval and be able to answer any questions people may have.
      The theme of this blog is all things nerdy, and breakfast food so I chose Deadpool for this recipe. Chimichangas are his favorite food. When writing this recipe I wanted to include versatility. You could change the ingredients to fit whatever diet or taste you have. This recipe could be made with real eggs and actual meat and cheese. This recipe could also be made without meat at all, just veggies. The sky’s the limit. Eating vegan is not always the most affordable option, especially with the economy right now. Also, eating vegan is not always appealing to everyone. I wanted people to be able to make this recipe their own in any way they choose.

Prep time: 30 minutes

Bake time: 7-10 minutes per side

Oven temp: 400°F

Serving size: approx 5 Chimis

Ingredients:

  • 1 can black beans
  • 1 roll of impossible sausage
  • 1 bottle of Just Egg
  • Vegan mexican cheese (just to sprinkle on the filling)
  • 5 Burrito size flour tortilla shells

Instructions:

  1. Start by preheating your oven to 400 degrees Fahrenheit. Also prep your glass pan with a good amount of olive oil.
  2. In a medium skillet, brown the impossible sausage
  3. Drain the black beans and then add them to the skillet with your impossible sausage. Cook on low just until everything is soft and warm: about 5 minutes.
  4. While that warms up, in a small skillet scramble the Just Eggs until they are almost cooked.
  5. Add the almost cooked Just Eggs to the skillet with the meat and beans. Stir until fully incorporated and eggs are also fully cooked. Once done remove from the heat.
  6. On a cutting board, start assembling the chimichangas. Lay the tortilla on the cutting board and add a few spoonfuls of the meat, egg, and bean mixture to the bottom half of the tortilla.
  7. Roll the tortillas and place seam side down in the glass pan.
  8. Spread on a generous amount of olive oil to each of the chimichangas.
  9. Bake on the middle rack for approximately 7-10 minutes per side.
