Why I Created This Vegan Breakfast Chimichanga Recipe

When I started developing recipes for this blog, I knew I wanted to include some vegan breakfast recipes. Several of my family members follow a vegan diet, so creating recipes they could enjoy was important to me. At the same time, I also believe that many people could benefit from eating a little less meat in their daily lives. Research continues to show that reducing meat consumption can offer a variety of health benefits.

Another reason I enjoy creating vegan and dairy-free recipes is because, like many people, I have trouble digesting dairy. When I find a recipe that is fully vegan, I know right away that there won’t be any hidden dairy ingredients. That makes cooking and enjoying meals much easier.

With this blog, I also want to personally test every recipe I share. That way I can confidently give each dish my seal of approval and help answer any questions readers might have when they try it themselves.

A Nerdy Breakfast Recipe Inspired by Deadpool

The theme of this blog combines nerdy inspiration with breakfast food, so I decided to base this recipe on Deadpool. If you know the character, you probably know that chimichangas are one of his favorite foods.

That made a breakfast chimichanga recipe the perfect fit for this post.

A Flexible Vegan Recipe You Can Customize

One of the most important things I wanted when creating this recipe was versatility. While this version is designed to be a vegan chimichanga recipe, it can easily be customized to fit almost any diet or preference.

Deadpool's Vegan Breakfast Chimichangas

Prep Time 30 minutes
Servings 5 Chimichangas

Ingredients
  

  • 1 can black beans
  • 1 roll of impossible sausage
  • 1 bottle of Just Egg
  • Vegan Mexican cheese just to sprinkle on the filling
  • 5 Burrito size flour tortilla shells

Instructions
 

  • Start by preheating your oven to 400 degrees Fahrenheit. Also prep your glass pan with a good amount of olive oil.
  • In a medium skillet, brown the impossible sausage
  • Drain the black beans and then add them to the skillet with your impossible sausage. Cook on low just until everything is soft and warm: about 5 minutes.
  • While that warms up, in a small skillet scramble the Just Eggs until they are almost cooked.
  • Add the almost cooked Just Eggs to the skillet with the meat and beans. Stir until fully incorporated and eggs are also fully cooked. Once done remove from the heat.
  • On a cutting board, start assembling the chimichangas. Place the tortilla on the cutting board. Add a few spoonfuls of the meat, egg, and bean mixture to the bottom half of the tortilla.
  • Roll the tortillas and place seam side down in the glass pan.
  • Spread on a generous amount of olive oil to each of the chimichangas.
  • Bake on the middle rack for approximately 7-10 minutes per side.
