Start by preheating your oven to 350F.
Place muffin liners in your tin and lightly spray with cooking spray.
In a medium bowl, combine all liquid ingredients. Mix until incorporated.
Add your dry ingredients to the liquid ingredients. Mix just until incorporated. Do not over mix. Batter will still be lumpy.
Scoop batter into muffin tin until 2/3 full in each one. Bake for 18-20 minutes. Toothpick should come out clean when inserted into the center.
Remove from muffin tin and place on a wire rack to cool.
Cool completely before storing in an airtight container.
