In the bowl of a stand mixer or a regular bowl add your flour, butter, egg, sugar and salt. Mix just until combined.
With the hook attachment or your clean hands add your yeast, milk, and just enough jam to color the dough.
Knead the dough until it forms a smooth ball.
Cover with a clean towel or plastic wrap and let rise for 1 hour or until doubled in size.
Once doubled in size preheat oven to 400 degrees Fahrenheit, and line a baking sheet with parchment paper.
Shape your dough into equal size football shaped balls. Optionally, you can add the “seeds” on the top with a small amount on the dough and a little bit of water to make them stick.
Cover and let the dough rise about 15-20 minutes.
Bake for approx. 10 minutes or until slightly golden on top.
Once baked allow to cool completely cool.
Once cooled, fill a piping bag with your jam of choice.
Enjoy!
*Depending on size of buns the baking time may vary. I usually make them about the size of a biscuit.
* You can also fry them instead if you would like a more donut like taste.
When I started this blog, I knew I wanted to include this recipe. It is a super fun take on a margarita for a brunch twist. You can even make this not alcoholic for kids or anyone who does not drink. Avatar, the Last Airbender, was the first anime that I watched when I was a kid, and it was for several anime lovers. This drink takes me back to watching this episode and laughing. Although, unlike the show, this drink does not have hallucinogenic effects.
Prep/Make Time: 5 minutes Serving Size: 1
Ingredients:
1 prickly pear (green or red)
1/4 c filtered water
1 oz orange juice
1 oz of triple sec
2 oz tequila
1/2 oz lime juice
tsp agave syrup (optional)
Instructions:
Cut a small slit into the prickly pear, peel and place into a blender
Add the water, lime juice, and optional agave syrup and blend until smooth
Strain with cheesecloth or a fine mesh strainer
In a shaker combine all the ingredients with ice and shake
6 Tablespoons of Cold Butter, chopped into very small cubes
8 Strawberries Chopped
1 Cup Buttermilk
1 Teaspoon Vanilla
Instructions:
Start by preheating your oven to 425 degrees Fahrenheit. Then, line your baking sheet with parchment paper or wax paper.
In a large mixing bowl stir and combine dry ingredients.
Using a large fork cut the butter into the dry ingredients by mashing the butter into the dry. Continue this until you have pea sized balls of butter all throughout.
In another bowl combine the liquid ingredients and strawberries. Stir until combined.
Add the liquid to the dry ingredient bowl. Mix just until combined. Over mixing will make the biscuits tough.
With a large spoon, drop the dough onto the tray making sure they are all relative in size to avoid uneven baking. Brush heavy cream or milk onto each biscuit and bake for 15-17 or until golden on top.
When I started trying to come up with recipes for this blog I wanted to incorporate some vegan recipes. A bunch of my family members are vegan and I wanted to write a recipe for them. I also like to believe that everyone could eat a little less meat in their lives. Studies have shown time and time again all the benefits of cutting a good portion of your meat out of your diet. I also, like many people have trouble digesting dairy and love to see vegan recipes when searching for one, that way I know for sure there is not going to be any dairy in it at all. With this blog, I want to try every recipe that I make so that I can provide my seal of approval and be able to answer any questions people may have. The theme of this blog is all things nerdy, and breakfast food so I chose Deadpool for this recipe. Chimichangas are his favorite food. When writing this recipe I wanted to include versatility. You could change the ingredients to fit whatever diet or taste you have. This recipe could be made with real eggs and actual meat and cheese. This recipe could also be made without meat at all, just veggies. The sky’s the limit. Eating vegan is not always the most affordable option, especially with the economy right now. Also, eating vegan is not always appealing to everyone. I wanted people to be able to make this recipe their own in any way they choose.
Prep time: 30 minutes
Bake time: 7-10 minutes per side
Oven temp: 400°F
Serving size: approx 5 Chimis
Ingredients:
1 can black beans
1 roll of impossible sausage
1 bottle of Just Egg
Vegan mexican cheese (just to sprinkle on the filling)
5 Burrito size flour tortilla shells
Instructions:
Start by preheating your oven to 400 degrees Fahrenheit. Also prep your glass pan with a good amount of olive oil.
In a medium skillet, brown the impossible sausage
Drain the black beans and then add them to the skillet with your impossible sausage. Cook on low just until everything is soft and warm: about 5 minutes.
While that warms up, in a small skillet scramble the Just Eggs until they are almost cooked.
Add the almost cooked Just Eggs to the skillet with the meat and beans. Stir until fully incorporated and eggs are also fully cooked. Once done remove from the heat.
On a cutting board, start assembling the chimichangas. Lay the tortilla on the cutting board and add a few spoonfuls of the meat, egg, and bean mixture to the bottom half of the tortilla.
Roll the tortillas and place seam side down in the glass pan.
Spread on a generous amount of olive oil to each of the chimichangas.
Bake on the middle rack for approximately 7-10 minutes per side.
1 cup of vegetable oil (or any other flavorless oil)
2/3 cup water
1 1/2 cups white sugar
1 1/2 cups brown sugar
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/4 teaspoon ground ginger
1/4 teaspoon ground allspice
1/4 teaspoon ground cardamom
Instructions:
Start by preheating your oven to 350 degrees Fahrenheit. Also, Prep your muffin or loaf pans by greasing them with cooking spray or butter.
In a large mixing bowl combine your pumpkin puree, vegetable oil, eggs, water, white sugar, brown sugar, and spices. Mix until combined.
In that same mixing bowl, with a sifter, add the salt, baking soda, and flour. Mix until combined. It will still be a little lumpy. That is okay!
Now, add your batter to your pans and top with crushed pumpkin seeds if desired. Bake in the oven on the middle rack for 50 minutes or until a toothpick inserted in the middle comes out clean.
When out of the oven wait 10-20 minutes before removing from the pans. Once removed, place on a wire cooling rack to cool completely before serving. Can be served with butter on top or plain.
